“Inside the course there must be health and genuineness”: this is Silvia’s idea of cooking, “the elf of the kitchen”. Silvia manages the restaurant since 2014 and also organizes herself kitchen classes and home catering on demand. She is very careful to the short supply chain, to genuine things and to the products of Slow Food, in particular to cereals and ancient beans which have got many forgotten features.
